Ingredients:
- 1 cup creamy peanut butter
- ½ cup peanut butter protein powder or vanilla protein powder
- 3 tablespoon maple sugar can also use brown sugar
- 1 whole egg
- 1 teaspoon good quality vanilla extract
Instructions:
1. Preheat oven to 350 degrees F
2. Mix all ingredients in the bowl of an electric mixer on medium speed until well blended.
3. Roll into tablespoon-size balls and place on a parchment-lined baking sheet.
4. Press down on center with a fork and repeat to make the criss-cross pattern.
5. Sprinkle the tops of the cookies with a pinch of coarse salt or raw sugar, if desired.
6. Bake for 10 minutes until firm.
7. Allow the cookies to cool completely to set and enjoy.
